I was suprised to see how small the kit was compaired to the Winexpert kits. Two cans of concentrate, one pack of oak and yeast. I did use the yeast that was supplied (Lalvin 71B 1122) says it excellent for concentrates. Fermention is very vigorous (70deg.) at 2 days now. I did use the oak, and...

Thanks for the reply. This will be my first try at a different kit. I have always done Expert wine high end kit and have had great sucsess with them. They are pricy though so when I saw the Willams kit and the reviews i decided to try one. Another question to ask you is about the yeast that...

    Williams Brewing Zin

I just bought a Lodi Ranch Zin kit from Williams Brewing. I want to know if anyone else has made this and what kind of feedback you have. Its a 5 gal. kit. I have always made my kits from Winexpert on the high end and have been pleased with the results. They are just a little pricey and thats...

WineXpert Petite Syrah / Zinfandel Limited Edition

I had the same happen to me only my gravity was low (1.090). When I posted what had happened I got the same response to stir, stir, stir. You can stir (not whip) very gently after pitching yeast. I would let it ferment for the 7-10 days and take a gravity reading. If high you can stir the yeast...

Robie, thanks for your sugesstions. You have me wondering now about the mixing up part. I do know that after i added the sugar and mixed that well, the SG was 1.100. I dont have the instructions in front of me ,but I pretty sure the range they give is 1.095 to 1.100. Its been fermenting for...

WineXpert Petite Syrah / Zinfandel Limited Edition

Made my Petite/Zin yesterday and after topping off to the six gal. mark, i took a gravity reading. It was only 1.090. i wanted it to be close to 1.100. I should have checked as i was puring the last half gal or so of water into the fermentor. Other kits I`ve done, have come out real close or...

    WineXpert Australian Shiraz / Viognier

I have a question about aging. The kit comes with k-meta that i added at the clairing and stablize stage. After I transfer I want to condition for at least 6 months. Should i add more k-meta at this point or wait 6 months?
