I had mackerel whit apples and butternut squash for dinner along with a radish salad.

Tannin is necessary only if you make grape wine, you still can add tannin to your strawberry wine if you like the tannin taste.

You don't have to recalibrate it every time you use it. I recalibrate mine every once in a while and it measures the ph fine.

Every one has its own aroma, of course it depends mostly of the ingredients. You can buy some aroma essence to improve the smell of your wine.
