Thanks for all the great ideas. I hate to admit but I had the names of the wine written on duct tape on the carboy. I guess I need a tag around my neck that says read first.
Thanks Masta! I have been trying very had to not make mistakes after my first disaster and this one was just dumb. I figured the wine would survive but my pride took a hit!
P.S. That drill stirer sure does a good job of mixing. Drill good. Spoon bad. Edited by: A62Rambler
I had tow carboys full of Barolo and Petite Sryah. They were both down to .994 and needed to be racked to a clean carboy. Then I could stabilize and degass them. I racked the Petite Syrah to a clean carboy and went to make the K-meta and K-Sorbate. When I returned I uncorked the carboy and added...
Wednesday I started my Barolo and Cabernet Sauvignon. I have all this wine either fermenting, waiting to be fermented or bulk aging. Yet, I have hardly any to drink. It's a terrible thing to have so much wine and none to drink but in about 9 months to a year, I'll be sitting back enjoying the...
I made this as my second kit. Well third if you count my screwup with the Lambrusco. I can't comment on how it works compared to other kits except the Millenium sparkling wine. My Reisling took a little longer to clear but cleared nicely with the provided gels. I have to say it tasted quite...
I started with roughly 16.25% alc and 12 L. I added 750ml of 40% alcohol. I thought it said proof because that's what I'm used to seeing but brandy is marked with % instead. After reading all the posts I'm more confused than I was.
Now if someone could tell me how much alcohol I added when I put 750ml of 40 proof brandy in it I would know how much is in my 12L port?

Thanks Dave,
I was hoping I wouldn't get to taste that soon. I am going to bulk age this for at least 6 months. If I taste at one month it may never make it.
I've got my Port on French House Toast. I didn't have a way to weigh it. So, I just put in a half cup by volume of the oak. How long should I leave it on the oak? I know taste it and see. The problem is that I'm trying not to taste the Port or Amarone because I'll end up tasting it daily. I...
My port is bulk aging on Oak. Of course I had to taste it. Wow, it's really good! It's young and a bit harsh yet but when this mellows it will be fantastic. I guess it's true that this is one kit you just can't mess up unless you really try hard. Mine has been fortified with E&J VSOP Brandy...
DFW,
I'm also interested in them only because I want to try some smaller kits. I have plenty of friendsbut they aren't interested in helping or in paying for part of the kits. But they have all agreed to help drink them after they age. They're very willing to do their part.

Thanks Appleman.
I'm partial to all juice kits only because I don't think taking water out to make a concentrate so I can put water back in is a wasted step in the process. I guess I'll just stick with the all juice buckets or maybe I'll manage to try the frozen must someday.
I know it is not one of George's products. I'm just curious to know about their quality. I'm very happy with my MM kitsand love George's great service. I also thought it would be a way to do a few 3 gal kits for wines I don't want to have 30 bottles sitting around. Such as trying a Cabernet...
