Other Help! I need a Kit Recommendation ASAP

I friend of mine just asked me to make a 6 gallon batch of a Cab Merlot blend for his wife's upcoming 40th birthday celebration. She loves the wines I make from kits and from fruit. I have just under a year to get the kit, get it going, get it done, and in the bottle for aging. One of her...

    fig recipe please

Thanks stressbaby. That recipe sounds delicious. I'll probably make it if I can find a good deal on pomegranates. About how many did you use to get the volume of seed listed? Sent from my iPhone using Wine Making

    fig recipe please

Over the last few month I have staked out about twenty or thirty wild fig trees that were bearing fruit. Well, I noticed today a few of those trees are starting to produce ripe figs. This also means that a lot more ripe fruit will be here before I know it. I need a tried and true fig recipe. I...

Damit.. not enough water . what now?

I did the same thing on my very first kit. I had been making fruit wines with no problems and for some reason when trying to play right and follow the rules to the letter with the kit I somehow managed to read the tick marks on my primary wrong. When it was time to transfer to the carboy i...

What are you making and what have you made ???

As a newbie I don't have nearly as much made as some of you but I am having a blast playing catch up. I received a basic equipment kit for Christmas of 2013. That kit is no longer basic! So here is what I've done and in the process of doing: Bottled: 6 gal - Quad Berry DB (strawberry...

    Chocolate Blackberry?

I can do chunks. Do you have a recommended amount to use or do you think 5 oz will be enough. Since you've done something similar how long would you let it sit on the chocolate before racking and clearing? Sent from my iPhone using Wine Making

    Chocolate Blackberry?

the plan was to let the wine age a bit with the cocoa and then use a clearing agent to clear it before bottling and letting it bottle age for at least 6 months or more before tasting. Do you think I should just let it age with the cocoa for six months with no racking and just wait for it to...

    Chocolate Blackberry?

I was eating some fresh blackberries tonight when I saw one of my boys grab a Ghirardelli chocolate from the pantry. So I decided that the pairing would be good and have decided to do a Chocolate Blackberry wine. I plan on doing a gallon batch at first to try it out. The plan is to make a...

May 2014 Wine of the Month Club

I have decided to do two wines this month. I found myself eating a handful of fresh blackberries and then saw my son grab one of those small Ghirardelli chocolates from the pantry. Then a thought occurred. Guess what it was? Yep, gonna try a chocolate blackberry. I have seen some other chocolate...

May 2014 Wine of the Month Club

It must be the seeds because I did not get an amaretto smell at all from my primary with just the fruit. It actually smelled kinda bad in my opinion until the SG hit about 1.020. Then the fruity smell came forward and now that it is at about 1.010 tonight the smell has improved even more.

    Muscadine Wine

I agree cmason. living in south ga I,ve always enjoyed a good muscadine wine. However, I find that most local wineries make them too sweet. When they're a bit drier the flavor profile can really come through. Lucky for me the vines grow wild everywhere and I have already staked out a few areas...

    Backsweetening process question

I've made two batches of DB and have used a simple syrup solution to both right before bottling. Of course, I used the sorbate when the recipe called for it witch I think was a week or two before I bottled. I used one part water to 2 parts sugar simmered on the stove until the sugar dissolved...
