    DangerDave's Dragon Blood Wine

I used 64 oz of 100% pineapple juice (instead of lemon juice) and cannot taste pineapple at all. The most distinctive flavor is raspberry from the 6 lbs of frozen triple berry. I just sweetened this batch today so maybe it will change over time. My only worry is acidity level. It tastes fine...

    DangerDave's Dragon Blood Wine

There is a Kosher yeast nutrient, Fermaid K (Kosher). http://www.scottlab.com/product-105.aspx I have not seen a Kosher energizer, which I believe has additional ingredients over a yeast nutrient, but every mfgr product is slightly different. EDIT: Without Pectic Enzyme, the wine may turn out...

Did I Over Agitate My Wine?

I have tried all methods of degassing including vacuum degassing. None have worked well for me. I now degass my wine by transferring it to a 3 gallon carboy (3/4 full), putting a silicone bong on it, and rocking it on a towel vigorously, with my hand over the bung. The gases will explode...

    Storing red wine.

Potassium Metabisulfite (aka kmeta). 1/4 tsp at the end of fermentation and then 1/4 every 3-4 months for a 6 gallon container. You can do the math. Hope you have good plastic.

WineXpert LE Super Tuscan vs Eclipse Barolo

If you ever get a chance, get the Eclipse Nebbiolo (Barolo). I just did my 3rd and it is one of the best that I have done. I have not found any LE kit to be as good. I bought a LE Nebbiolo a few years ago to compare to a Mosti Mondial Magliolo and WE Eclipse Barolo that I fermented at the...

    Cleaning a Portuguese Floor Corker.

I take an unused cork soaked in kmeta and squeeze it through the corker as if I am corking a bottle. I repeat this a few times before I start any corking. Using alcohol instead of the k-meta is probably better. I'll do that next time. I took it apart once and it was a pain to put back together.

Can I force carbonate THEN bottle?

Just use non-twist beer bottles and cap them. The bottles are meant to be capped. You can also use the 1 liter soda bottles and force carb them with the Carbonator cap. Should be good for short term use.

    cold stabilization redux

I don't think it makes sense to use CS for those purposes. If you want to remove as many particles as possible then filter the wine. CS does makes sense when the desire is to reduce acidity of a wine or, in white wines, to remove the tartrates (as you indicated) so that the chance of forming...

Clear and Age OR Age and Clear

My preference, for reds, is to let bulk aging do the clearing. However, I bulk age my reds for a year, at least, before bottling. For whites, my preference is to clear then bulk age for 3-12 months. For summer wines, my preference is to clear, then drink. But I suggest experimenting if you...

25 Food Things Only A New Mexican Would Understand!

Mike, I make something similar but use the kettle type of potato chips instead of hash browns. Very good and a bit easier to make. I'll be in Mexico next week and will be there for several months. Yes, lots of huevos rancheros, chile rellenos, carnitas, and fish tacos will be consumed. But...
