    Custom Crush

I think I've mentioned this before but I can't seem to find it. There is a winery close to where I live that does this. http://premiumwinegroup.com/ http://www.winemag.com/Web-2012/Its-Your-Barrel/ I also found another in Virginia that does the same. The one in Va states that it charges...

    Anyone make their own vinegar??

Anyone make their own vinegar? Or have any resources or recipes to share on the subject? I have a batch of apple wine that just didn't come out quite right. No sense letting it go to waste. I wouldn't mind making it a vinegar.

    Amarone. What's the deal?

I recently acquired an Amarone kit. I have never had the pleasure of drinking this type of wine so I really didn't know too much about it. Usually if I find a kit or hear about a certain type of wine I will give it a try and compare it to what I have or will make. For example, I never heard...

    Nice craigslist score

Scored these really cool wine boxes off CL. They hold 6 bottles each and have the "guts" inside to hold the bottles securely. The lids are nailed or stapled on but I'm taking a trip to the craft store today to get some cigar box hinges and clasps to make them more user friendly.

    Maybe adding tannins?

There is a certain type of wine that I am partial to. I will try to explain its character the best I can: Red, semi-sweet or off dry, maybe a little oaky. That is the base. However, every now and again I come across wines as I described above but with an added "zing". Even though they are...

    Cellar Craft Can kits expire?

I was wondering if wine kits can expire? A friend of mine has one and says its been sitting for a while. I'm not sure how long maybe a year or so. So...can they expire?

    WineXpert Kit mixup

I recently started 2 kits at the same time. 1 is a Australian Chardonnay and the other is a Merlot. It seems I have mixed up the fining ingredients and I'm not sure which one came with each kit. Here is a pic of the 2 packets: Anyone have any idea which one goes with the proper kit?

    WineXpert Kit not clearing

Sorry about writing another clearing thread. I've made several of the WE kits. This one just will not clear. Is it safe to hit it with another round of chitosan, etc?

    Cotton candy grapes

Anyone have any experience with cotton candy grapes? Might make for an interesting wine. I would like to try them if I could find them in large enough quantities. http://www.grapery.biz/index.php/grapes/cotton-candy

Not sure what to do with my apple wine

Last September I came across a substantial amount of apples from a local farm. SO what better to do with them than make wine. I found a recipe that seemed easy for a beginner(first time using real fruit, not a kit). I've had the batch bulk aging for almost a year. Every few months I'd do a taste...

Wine making the "old school" way

I met a gentleman the other night. My friends Dad. He is straight from Sicily and barely speaks English and he's known for his wine making in the family. I've had the pleasure of sampling some of his wine and it is indeed outstanding. Anyway, like I said, I finally got the chance to meet him and...

    slurry/lees floating in SP

I did my first racking of SP. I added the Kmeta and sorbate. I let it sit overnight before adding the clearing agent and I found little balls of what looks like yeast sediment or slurry floating at the top of the carboy. I tapped the walls of the carboy and gave it a little shake and most of...

Maybe a good way to get a carboy....

I just wanted to pass this along. I was given a Mr. Beer hard cider kit like this one: http://www.mrbeer.com/hard-cider-kits I'm thinking I may buy another. Because I'm always in need of carboys of various sizes I figure why not kill two birds with one stone. The cider came out pretty...

    Sulfites in wine

A friend of mine told me she doesn't drink wine because she is allergic to sulfites and wine contains sulfites. She did state that homemade wine is OK because it does NOT contain sulfites. Can anyone clarify this? Do all commercial wines contain sulfites? I do see it on the label from...

Ball brand pectins. Can we use them?

I found these at the local Walmart. Can they be used for our purposes?

Can I force carbonate THEN bottle?

I experimented with a batch of DBSP by putting it in my kegerator and force carbonating it. It was very very good!!! I was going to the beach with some friends and wanted to bring some to give out to a few people. So instead of putting it in growler type bottles I filled a few wine bottles...

    Mistake while racking

I'm making a kit wine. Not my first but.... The directions state BEFORE racking into the secondary to ensure an SG of 1.010 or less. I forgot to check the SG prior to racking. So after I racked to secondary I realized my mistake and took a reading. It was at 1.022. This was well after the...

    White film in Better Bottle

I had My better bottle carboy sitting for a few days with just water and K-meta in it. Now the bottom has a transparent white film. A brush will not take it off. Is it still safe to use this carboy? it's been scrubbed and cleaned out many times since the film was discovered.

Kedem grape juice. Anyone ever tried it to make wine?

I found this stuff at the super market on sale 1/2 off. Anyone ever use it? Here's the white: And the Concord: Both have basically the same ingredients.

    Fruit wines. Sweet or dry?

I am trying to venture into the fruit wine making arena. I have successfully made several batches of Dave's DBSP. However, being from the NY metro area. I have very little experience with what real country fruit wines are "supposed" to taste like as they are hard to come by in this area...
