    From 68 to 80 were only talking like a .001-.002 difference, IMO not significant enough to consider.

    At 1.000 you should rack and top off, or at least top off. You don't need the sorbate unless you plan to back sweeten. .004 difference? Could be temperature difference from your hydros calibration.

    They give you EC-1118 because it's a workhorse yeast, without any special needs, hard not to get a good ferment with it.
