    Christmas Spiced Raisin Wine

This is a fairly original recipe. I started making this years ago from a recipe that was adapted from one of Terry Garey's. There is a lot of spices but no one panic please, it works out great in the end but takes at least 3 years to age. Recipe is for 3 gallons ! (that's for Wade....lol)...

    Make your own

Instead of buying an overpriced stirrer.(in my mind). Buy a stainless steel stir spoon, and file it down to fit it your drill chunk. Also grind down the spoon so it fits into your carboy. This works just as well as any fizz-x that I have ever used ( probably better) and won't ever break. Pete

    Royalties for certain varieties

Certain grape varieties, predominately those originating from Cornell University, require a royalty to be paid. From what I've seen this is from anywhere from .35 to 1.85. I'm sure appleman knows about this and probably several others. Could someone chime in and let me know how this works, such...

Myself and the family had an adventure today and to my happy surprise I found the hiking path loaded with wild fox grapes. My golden retriever "calista" even enjoyed a few...lol. I am wondering if anyone has tried to cultivate them. I also noticed that while some where loaded with grapes and...

    Ahhhh...I found em'

Was cleaning up in my stooge room and found some long lost treasures. A bottle of my 2006 blackberry and 2 bottles of my raisin sherry from the same year. They where in a mislabeled box, luckily laying on there side and the room stays a dry 60 - 65ish year round. I'll post a pick later. I'm...

Well, here I am sitting 12 miles from Seneca Lake and chomping at the bit to get moved into my new home in the Finger Lakes region of NY State. I'm blown away with the number of winerys and such just up the road. Can't wait to check a few out. I should be set up and brewing/ fermenting in a...

    Hmmm...What to do ?

Ive got very limited time before I have to move again so I've been thinking on what to make that I can have in bottles quick. As I prefer to bulk age all my meads at least a year before bottling, that is right out the window. Ive done a few ales already...the last a breakfast stout, (...

Well, I got my meadery-brewery all packed up and moved from Gillette, WY to Lafayette, LA in July. I just finally got everything situated and was going to start a few new meads when I got a call from my new boss. I'll probably be moving again in a month or 2. This time its looking like southern...

    Currants are getting ripe!!!

Just got a call from a buddy of mine and his black currants are starting to ripen. He picked a quart or so and is trying to stay ahead of the birds. I'll have enough for 3 gallons of wine and a bunch of jelly. He also has a few red currant bushes. Pete

    Just lovely weather we're having

Just a nice view from work. It was just a mile south of my house so the wife and kids spent some time in my wine and beer room. That was when the wife found all the fresh beer and decided to taste test a bunch later that night. By the rate it is disappearing I'd say she found it to her liking...

    Busy couple days

We just got pounded by Mother Nature. A good 14 inches of snow and I've got 5 ft drifts in the back yard. Needless to say I've been stuck in the house so I got busy in the Chateau Aubin winery and brewery. Bottled a batch of old american style ale, 6 gal apple wine, 1 gal citrus melomel. Also...

    Citrus Melomel

After I finished bottling my apple wine I desided to get busy and bottle my citrus melomel. It seems to need something but it isn't harsh as some meads are when very young. Not nearly as acidic as I thought it would be when I first started it. Nice and clear and a nice color though! Some more...
