Bad yeast :( good yeast :)

Always be careful and sanitize everything, this is the number one rule. If I'm not mistaken aren't campden tablets and Potassium Metabisulfite the same thing?

Looking for a good source for bottles

I have been getting free used bottles from my local winery for a while now. Whilethe price is right the cleaning and removal of the labels has proven to be a dauntingtask due to the fact that I am trying to stock nearly a 500 bottle wine cellar. Some bottles have red stains that I can't get out...

WineXpert Adding Body To A WineXpert Kit

I have made 5 WineXpert red wine kits so far and have enjoyed them all. My only question is how can I improve the body and mouth feel of any given kit? I like a full body wine. I have used some of the 2 gal concentrates and some of the 4.2 gal concentrates (the latest is a Select Estate Lodi...

What does the pectic enzyme do? An why bother putting them in a bag? Can't you just toss them in the must and rack it later?

Really? I was told by the owner of a brew supply chain that One Step was NOT a sanitizer.

    sanitizer

Cleaner I believe it is just a cleaner, used for removing brewing deposits and labels. Get Potassium Mea bisulfate and mix 3 tbls to a gallon of water. Do not inhale the fumes!

Thanks Wow, you guys are great! Good advice and fast answers, I'm sure to be back here often as I make my way out of kit wines and onto new ventures!! I have a 6 gallon set up (primary bucket and secondary carboy) is 5 gallon the standard? I read a few recipes on here and they also used...

    Question about potassium metabisulfite

Sorry Sorry, My bad. It seemed to me like the guy thought I was an idiot for not knowing someone had invented measuring spoons. I apologize, I do respect the advice of those who have been at this a while and care to spend their valuable time answering my sometimes stupid questions.

    Grape skin packs

I’m getting some conflicting data on O2 and making wine. If as you say “daily squeezing” this indicates that you open and introduce O2 into the must while every kit I have made says to cover it tightly and use an air lock from day one. I do not touch it until I rack it off into my carboy for the...

Let me answer all the questions thus far. The cider I bought was from a grocery store and it has Potassium sorbate and Sodium benzoate in it but people on this forum have used Welch’s juice and that must have preservatives in it too, right? I have one of those thermo tapes on it and it is...

    Question about potassium metabisulfite

Potassium metabisulfite is the same as campden tablets but in powder form. I purchase 2 oz of the stuff and it did not come with directions for use. I looked it up online and found a website that said 1/4 tsp per six gallons of juice. Do you really use that little? I have one gallon of cider I...

I started 1 gallon of apple cider a few weeks ago and had a hard time getting it to bubble. I added enough sugar to bring it up to 1.080 SP then added the yeast nutrient as instructed on the package, 1 tbls if I remember correctly. I then rehydrated a pack of yeast (212 wine yeast) and nothing...

What about raisons? I've heard some talk about using raisons to add body but my question is would you add them whole or would you need to pulverize them first?

    Apple Cider Wine

Hey Milkman, Care to share your recipe? I only tried one gallon of coder due to my newness. I added a pound of sugar and a teaspoon of yeast nutrient and pitched 1118 yeast. While it did start bubbling , however slowly, it stopped in a day. The cider I bought has Potassium sorbate and...
