Hi guys I've transferred my wine kit for the last time but have not filtered yet and I'm wondering based on the picture if it's safe to leave it for a couple of weeks before filtering and bottling. The airlock is raised so does that mean there's enough CO2 in there to keep it safe?

Are you guys mixing 3 tbsp per gallon as I mentioned in my first post? That's what I just did and it was a very strong smell!!!

I've had a new thought how about using a good quality night stand that is 25" tall, that should be tall enough to siphon from and strong enough to support 60+ lbs.
