I have a passive wine celler I built on the exterior wall which used to be the old wood fireplace built into the concrete foundation. I spray foamed it and made racks and its where I store my wine. The temperature is around 17C (62-63) in the winter. I can also make it a little bit colder by covering up tur gap on the bottom of the frosted glass door i installed. lhave a Rosso fortisimo bulk aging for about two months however it's temperature is around 19-20 (67-68f). Should I just filter it to get it into the cellar? The other thing is I don't want to add anymore wine for topping up, I also don't want to rack down so the only option I'm open to is using glass marbles. There is one additional option, and that is the heated attached garage. However I have an outdoor cat that sleeps in the garage during the day (mouser)...I imagine he would.get into the wine or chew the air lock.
