Still missing my mentor and I didn't take enough notes. My supplier(now gone) sold me 1 lb of super start distillers yeast to use for wine making and said if I kept it in fridge it would last me forever! It has worked well in the past, but I lost my notes and do not remember how much yeast to use for 5 gal of wine. Any suggestions?? Any help appreciated, Thanks, Felix
 
I would take about a full teaspoon and rehydrate it to make a good starter and then add that to your must.






While this will work, you may not be getting the most out of all your wines. Different yeasts bring different things to the mix. White wines use different yeast than red wines and so on. Yeast is cheap. I keep about 5 different yeasts on hand at all times to select for what I am currently making.
