Hello.. when is best time to prune and cut back vines for optimal fruit growth this year?

Where would I start to cut back vines which have been grown long over fall/ winter ?

Today is the optimal day for pruning your vines. I think for people to answer your question regarding how to prune, it would be helpful to send some photos, so people can see your trellis system.
 
Agree with Masbustelo. There are a variety of ways to prune depending on the variety, age of vines, and existing training system (if there is one.) . Post some pics so we can get you on the right track!
 
Check out pics as I pruned the plants but looking for suggestions on optimal growth suggestion as plants are very close together.
