I use them for longer term aging. Hubby does this for me, but we just fill them up and he closes them up and tops them off with nitrogen (I think). They are really nice and easy to move and don't need to worry about keeping the light out. We usually will bottle a gallon for tasting and keg the rest. I have not tried fermenting in them so I have no idea about that part.
