    italian brunello Thanks for the input! I had anticipated at least a 1-2 year ageing,but of course wanted to hear from those who had made it. I don't tweak higher end kits,they are good as is(imo).the 7-9 liter kits, due to price, allow for some experimentation,they are usually thin anyway...
