    Fortifying a port

    So, I made this awesome elderberry port. :dg I used the Vierka Portwein yeast that was supposed to go to 18%ABV. It stopped at 10%. I just racked it and added two 750ml bottles of 100 proof Monarch Vodka to the 6 gallons. Is there a way to determine my ABV without a lab distiller? :d

    Increasing my batch sizes

    I've been making my wines/meads in your standard 5 - 6 gal batches. A week ago I picked up a couple of 55 gal drums from my local beer & wine supply house to make bigger batches. Should I increase all my chemistry by a factor of 10 or do some things increase more than others as the overall...
