    Thanks, yes it is quite new. Started about 30 days ago. I think you are right about the tannins, there is an astringent quality about it. I will wait amd see what happens.

    Lodi region cab that I just racked for the second time and oaked for the next 3 months...had to have a sample though!!! Not bad...

    Currently have five batches going... Malbec - grapes from Chile Riesling with Apples Washing Merlot Cabernet from Sonoma Blackberry Merlot Just bottled another Malbec tonight :)

    I haved a huge problem

    I purchased the 6 gallon Winexpert Moscato kit. I put in 10 pints of strawberries and 4 pints of kiwi. Everything went great and I bottled it...I hosted Thanksgiving and people loved it so much they drank 8 bottles! :h Now I have everyone begging me to make more.

    Secondary recommended time, clear then and I move it to a third carboy, reduce head space and then leave it for another 60 days...

    Merlot Tonight I started a Winexpert Merlot kit with extra oak in cheesecloth and 10 pints of blackberries smashed and put in cheesecloth. Looking forward to the finished product.

    Tonight I started a Winexpert Sauvignon Blanc kit, which I have made before and is not bad. However, this time I added fresh squeezed lemon juice and then put the squeezed lemons into cheese cloth and put them in the primary fermentor. The wine seems like it might benefit from a little citrus...

    Well it took a bit longer to clear than I had hoped, but wow did this stuff turn out incredibly good...I am very happy...very very clear and tastes great. Had the whole family over for dinner and they enjoyed it as well.
