    I have good access to grapes, the problem of course is harvest time comes all at once. Since I am new to this, I see the activities as quite passive, once it is in the aging vesel. How about crushing, destemming, put them in airtight bags and freeze? Then say three months and six months...

    question on bottle timing

    If the wine was in a barrel, does that change the consideration? The local winemaker keeps his 12-18 months in the barrel. Does aging in carboys accelerate the process? Or is at a point of diminishing returns and a compromise for, as mentioned, space and equipment?

    32 gallon container good for 15 gallons of wine?

    Newbie here from Nor California. I have access to Rhone varietals and planning on 15 gallons of Cab Franc. If I were to pick a 32 gallon container full, use a motorized destemmer and a manual press, would that 32 gallons of grapes net 15 gallons of wine?
