    Black Currant Wine

    I will soon be bottling some Black Currant Wine. I never made this before. What do you guys prefer - dry, semi sweet, or sweet ? I tasted it and like it dry but what I've read seems to talk about it being sweet. Thanks

    spring tonic

    Ah, my first taste of fresh leeks. Small, tender and a little bite. Put this in potato soup for supper along with home made bread. Will make some dip later. It doesn't get any better than this ! No wine tonight, ---- well maybe later.

    Winery size

    My wine room is in the basement. I was just looking at the room size and equipment on hand. I can physically brew about 70 gal at a time but seem to average about 30-35 gal. I'm just wondering what all you guys (and gals) do ? I have been thinking about a large fermenter but hate the thought...

    New old guy

    I finally made time to write this introduction. As a young boy I use to steal my mothers canned fruit and try to make wine. This usually resulted in blown up jugs with crap all over. Later in my 20's I got the hang of things but then the job and raising a family took my time. I'm retired now...
