    MLF Restarted After K-Meta?

Tingo, my understanding is that it is, like you said, the acid blends that most companies use in their kits. One, the citric acid can be converted to acetic acid and, two, the conversion of the malic acid in the blend to lactic acid can lead to a big drop in acidity (& increase in pH), leaving...

    MLF Restarted After K-Meta?

Thanks everyone. I've noticed a few tiny bubbles have formed along the edges of the surface of the wine today. It's nowhere near a full ring (it's literally a few bubbles), but it maybe an indication that MLF is indeed picking up...or I may be starting at my wine too much :). I'll keep it...

    Are the shrink capsules important

My understanding (which could be wrong) is that capsules were originally used to protect the cork from attack by rodents and insects.

    MLF Restarted After K-Meta?

Lot's of stuff here! First, I want to emphasize that this batch is an experiment. I understand that and I understand that I may end up gallons of undrinkable swill. I also know that whether this batch is good, bad or totally undrinkable, I've learned a lot in the process and that education is...

    MLF Restarted After K-Meta?

Hi Mike, I spoke with George at FVW before attempting MLF and he said that, while he doesn't typically recommend MLF on kits, that it is okay to try MLF on MM kits—but that is the only brand that he thinks will work with MLF (it has to do with the type of acids kit manufacturers use to adjust...

    MLF Restarted After K-Meta?

Thanks. I don't see the ring of tiny bubbles at the top of the wine—I'm not sure if that always exists during MLF or not. Is there any possible explanation for the movement in the airlock other than MLF?

    MLF Restarted After K-Meta?

Hi, I started a MM Ren Pinot Noir kit 6 months ago (June 3rd to be exact). It fermented completely to a SG of .990 in a bit over two-weeks. At that point I took a taste and felt that the wine would be too tart and acidic for my liking and decided to experiment with MLF. So I left the wine on...

How Can I Make a Label Similar To This?

Just make sure that you put the bullet holes in BEFORE putting the labels on the bottles :)

How Can I Make a Label Similar To This?

You might find it at an office supply store, but an arts & craft store (or online) would definitely be a safer bet. Regular old glue sticks work really well: they're inexpensive and easy to find, non-toxic, apply easily, give you a good smooth adhesion, and will come off nicely when soaked in...

How Can I Make a Label Similar To This?

I would consider printing it on brown kraft paper and then tearing the edges against a ruler (instead of cutting them apart) to get the rough look. It will look far more authentic than any simulated brown paper that's printed on a laser or ink-jet, and it will be dirt cheap!

    My first bottle!

Thanks! Photography has been a hobby of mine for years and it was a fun to bring my old and new hobbies together to take this picture. It turns out that it's actually really hard to take a good photo of a bottle of wine (this one took me close to an hour to get) :)

    My first bottle!

I bottled my first batch last week (MM Ren Chilean Viognier) and got the labels and capsules on today. I'm really happy with the way this came out -- hope the wine will taste as good as I think the bottles look! -Jeff

Recommendations for a quick kit while the good stuff ages?

Thanks guys. Lots of good ideas here! I really dislike sweetness in wine, so I don't think that mist kits are for me. Skeeter pee's an interesting idea. I've actually been thinking about making a small batch of this to see what all the buzz is about. Still, I expect that will be more of...

Recommendations for a quick kit while the good stuff ages?

I've been lurking around here for the past few months and you all are wealth of knowledge. This is my first post. I'm new to this hobby -- started my first kit about 3 months ago -- so I don't yet have a collection of wine that's ready to drink. So far I've made 3 kits: WE Selection...
