I am considering adding tanin to the Zinfandel kit because i heard that it doesn't quite have the bite one would expect of a hearty Zinfandel. Anyone have constructive comments or experiences to share on this? If not, humor is always appreciated. Thanks.

The instructions do not provide much detail on the use of Kristalblok. i took a stab and just put the pouch straight in to the carvoy after adding the other clearing additives and stabilizers. Anyone know the correct procedure for using this stuff? Thanks in advance

Hey all, Can anyone give me some advice on topping off my second racking on the Pinot Noir. I'm about 1/2 a litre low and don't want to dilute my wine with water. Not sure how it happened - over exhuberance of a newbie taking too many tastes, I suppose. Thanks everyone.
