    since I'm a newbie, and at the risk of sounding very stupid, what is MLF?I follow the enclosed directions to 'T'.....but the kit contains everything that I supposedly need....the one difference is the extra pot. meta. that George says to add to your wine when bottling in his instructional video.

    I racked and bottled my MM sauvignon blanc last nite. After it was all done, I realized that I had forgotten to add the sorbate. What should I do? Uncork all the bottles, add the sorbate and re-bottle? I had degassed it quite well several weeks ago and it had hardly any bubbles when I racked it...

    Can someone please explain the difference and the reason for both the potassium and the sodium metabisulfites? I have bought nothing but kits from George, all MM and have potassium for the third step racking. But George sent me sodium meta. in my original equipment kit. Does it really matter...

    It was the MM Caberlot and it is already bottled. I bottled it back in Feb. and have opened a few bottles, some have the little white floating specks, some don't. I did everything by the book and all my readings were right on. It tastes absolutely wonderful and aclear, garnet red.
