    I did pick up an off dry Gewürztraminer kit, I guess maybe I'll have to stick with one or two fruity reds (mist kits or similar). Thanks for the suggestions, personally for myself I prefer the sweeter type wines but I wanted something to suit most everyone's taste.

    Ah.. the things the instructions don't tell you. Thank you so much, that did the trick. Stirred the carboy a bit, didn't want to disturb the sediment too much, took a sample and stirred that up really well.. it's sitting at .996. I haven't lost my mind after all..

    The hydrometer reading on it is .996. It was only after I started this kit that I discovered they made mist kits :) From now on, that's probably what I'll be making.
