Thank you all for your thoughts on this. I think when I return from my Wedding / Honeymoon in a few weeks I'll try some oak cubes in my next kits.

Do you leave it on the oak then for 2 months? 6 months? before racking it off and then age some more or just leave it go?

Can you over oak a wine? We put the oak in during Primary, if we add some in for bulk aging is it going to over oak our wines?

We bottled a Sangio and a Sav Blanc right after they were done about a month ago. These wines we are fermenting now we are planning to age 6 months before drinking. So we were thinking Bulk age for 6 months on SA Shiraz and the Cav Sav and bottle the Cab Franc when secondary is complete....

I have the following in Secondary right now... should I bulk age them all or just one or two? Cab Franc ? Cab Sav ? LE South African Shiraz ?

Sooo... I was just browsing the federal regulations on Wineries ect... and I was thinking.... Why would anyone want to go through all that?!?!?... It just sounds like such a brutal process....
