    Can I backsweeten later on?

Always be careful sweetening new wine. As wine ages it will become less harsh and taste sweeter. If you sweeten new wine and this happens you may end up with a wine sweeter than you want.

    Best Beginner Wine

To get your feet wet without spending a lot of money I'd go one of two ways; either buy a Orchard Breezin' Peach Perfection as this kit is easy to make and most people like it. Kit runs between $65 and $75. The other option and I hate to say it is Dragons Blood and there is all kinds of...

Lalvin K1V-1116 is my go to yeast for making Blueberry wine. From there web site: The K1V-1116 strain tends to express the freshness of white grape varieties such as Sauvignon Blanc, Chenin Blanc and Seyval. The natural fresh fruit aromas are retained longer than with other standard yeast...

PH and TA levels in Elderberry wine

I had the low pH low acid happen to me once and never did figure out why. I fermented and then added acid. After ferment lower pH isn't as big a deal and with a lower pH you don't need as much sulfite. Agree with Julie on getting acid up a bit. I have used Real Lemon Juice to add some...
