Acidity an Brix - adjustments needed?

Amador County Syrah Brix: 25.7 PH: 3.78 TA: .69 Should I make any adjustments to sugar and acidity before fermentation? I feel like I need to reduce the PH some, possibly the Brix as well. Thoughts?

    Smoke Taint - Butte Fire

Hi All, I will be picking up my Syrah grapes shortly from the Shenandoah Valley in Amador County. There was recently a large fire up in the area (70K acres) and I'm concerned about the quality of my grapes. I spoke with the vineyard and they assured me that there is no smoke taint since...

    Wine testing equipment wish list

I have one as well and look forward to using it. I figured it was worth paying extra to have a ph, TA, and SO2 meter in one simple device. My only concern is the reagents don't last long. The site says the reagents are good for 6 months after purchase. Does that mean 6 months after they are...

Thanks for all the replies. Glad to hear that I can use the garage. Gives me a lot of room for expansion!

    Making wine in the garage?

Thanks Dan! Unrelated question, but I'm sure you'll have the answer... I picked up my french oak barrel today from Artisan Barrels and it's still in plastic wrap. Do I need to hydrate it now and start burning sulfur in it, or can I wait around 6 months and open/hydrate just prior to filling it up?

    Making wine in the garage?

Hi All, My question is if you think it would be ok to make wine in the garage even if there is approximately 10 cans of paint and a few quarts of oil in there as well. I just bottled my first kit last month and am already addicted. I recently purchased a 15 gallon barrel, 50L keg, vinmetrica...

Does anyone own a scale and have reduless?

No need to apologize. I have a scale and have weighed it in the past and it was right around 1/4tsp. I don't have any on me right now or I'd weight it again for you.

    Solids at top of carboy

Thanks everyone. This site has been a valuable resource. I've attached a couple pictures of what it looks like now and had a couple questions: 1. There seems to be quite a few seeds in the carboy. Will this affect the taste? 2. Is the stuff at the bottom gross lees or fine lees? The kit...

    Solids at top of carboy

Thanks Rocky. You are correct that it seems to move around some. I was starting to worry until I saw your post. Glad to hear its normal.

    Solids at top of carboy

Hi Everyone, I've been lurking the site for a while and just started my first wine kit. I purchased the CC Showcase Red Mountain Cab kit and am on days 10-12 in the instructions. Everything has gone smoothly up until yesterday when I racked it from the primary to a glass carboy. My SG was...
