    Cold Stabilization

Ok I know nothing about CS. I live in Alaska and was thinking about putting a wine outside to arrest fermentation. I messed up and added to much sugar 1.110 but don't want to add water and dilute the wine. I know I can use additives to stop the fermentation but thought perhaps I would try the...

    Steamed canned juice for wine???

Yes I started saving the pulp in jars, to perhaps ferment in wines. Made some yellow plum butter, and grape butters out of some too. I picked about twenty pounds of black currants today, that will need to be steamed. A friend needed help harvesting and I was more than happy! I throw the currant...

    Crab apples

This is all very encouraging! I went and saw a crabapple tree today. It's owner said I could pick what was left when she was done so I'll add that to the twenty pounds in the freezer! Hopefully have enough for a five gallon batch. Any good recipes out there, might not have an opportunity to make...

    Crab apples

My husband and I picked our first ever crabapples this year off a neighbors tree! I have heard good things about crabapple wine and would love to try it. I have 20 pounds of apples whole and in the freezer. Hoping to get some more in a couple of weeks, from another neighbor. I am going to be...

    Steamed canned juice for wine???

Thanks I checked out your blog lots of info! The chocolate raspberry sounds very yummy! So my husband brought home a flat of yellow plums, and I thought I would steam juice what we couldn't eat before they go bad. Now I am wondering about the left over pulp? Could you dehydrate it to put in your...

    Steamed canned juice for wine???

Thank you for the responses! I will be using this approach for sure on raspberries and red currants! I have informed my husband that we need an additional freezer! My mom is going to let me borrow her canner, so I think I will juice straight into jars like you said Bob and then if I have jars...

    Steamed canned juice for wine???

Help the freezer is full and it is time to harvest for wine making in winter. I have a wonderful steam juicer, my question is can I juice my fruit and then can it in jars for wine? The canning process would definitely be cooking the juice, so I am not sure how that would effect it with making it...

Honey for mead, can I make my own???

Yes bees make honey, this is pretty much a fake honey that I am making with sugar water and a variety of wildflowers. The homemade honey is a nice golden color, and has a very yummy honey taste. After my first batch of honey I started to wonder if mead was an option, I suppose it will be a fake...
