Great info from Vandergrift Oldvines, thanks. I had given up on kits cause they all taste like sh*t so far to me. I'm excited to revisit my kits as they move past 30 months and see what happens. My Eclipse Zin will hit 24 months shortly.

I drank one of Craig's splits of Forza last week. Delicious, even early. Quite fruity, a little hot. Craig: Did you use all the additives? Even Sorbate? What type of water did you use? Very nice Job!

Hello, I'm looking to learn about tannins, and adding them to my kits. Does anyone know a good primer, or anywhere I can get some " Tannins for Dummies" type info? Anyone interested in adding their two cents? I did a search, but have come up lacking. Thanks, and sorry if this is old/ well...

I racked this weekend. It tastes similar to the Eclipse Nebbiolo I have going. I used RC-212

My OV zin has been in bottle for 3 months, after 1 year of bulk. Used 1118. I WAY over oaked it, with medium French spirals. Hope it will mellow out after another year in bottle

Would changing the yeast help?

I don't use any of the additives, bulk age for a year, rack every three months with new spirals. Bottle at 1 year. Try to keep my hands off. Decant for a while before drinking. I don't know enough about tannins,but would like to learn more

I pitched my "Nebbiolo" 11/22/15. I hope I can wait until 2018, I doubt it
