    Red Wine and white carpet....

    I have a off white carpet,(not my choice)..... I spilt coffee on it and had abugger of time getting that stain out, I now have nighmares of spilling my red wine on it.I figure if coffee stain was such a pain, if ever I should ever spillmywine ....it would never come out. Really vinegar...

    My wife asked me if I am cheating

    When I first started making kit wines I discarded my lees. Later it was pointed out to me, to save the lees, put the lees into another smaller container with air lock and let it settle a day or two. You would be surprised how much usuable wine you can get this way. JC

    I agree with Appleman, it is near impossible to find proper caps for the screw tops wine bottles. I do use as he stated beer bottle and crown caps. The one advantage to using caps over cork is there is no possible way to get cork taint. JCEdited by: jcnoren

    Rookie disaster

    To help prevent further mishapes when lifting your carboy, I find that placing it in a plastic milk crate not only makes lifting easier (good handles). The milk crate PROTECTS the sides from getting hit thus damaged. JC

    When you say sweeten to your taste...just prior to bottling all of my wines seembitter however I am reluctant to sweeten at thispoint. I find if I let my wine age in the bottle even 6months, the wine seems to taste sweeter. Now possibly the sweeter taste that I detect is not sweetness at all...
