I only have camden tablets. Can I use those to add to the wine? How?

We have half of our 2019 Petite Syrah in a 60 gallon barrel and the other half in 5 gallon car boys. We keep seeing a white film develop on the top of the wine in the glass car boys. Does anyone know what this is and how to get rid of it? Thanks

Today the all the must is a -1 Brix. I am keeping the cap covered tight with plastic wrap and a plastic shower liner. Temps are 66 and 60 with the cellar temp at 58 so I think we will be ok till Sunday. The wine tastes dry but not tart.

Revised and I also added Fermaid K to the mix on day after the yeast and added again yesterday but the brix was below the 1/3 drop due to the accelerated fermentation.

We have used D254 for two years now. The 2018 is still in the barrel getting ready for bottling into 5 gallon carboys so we ill see how it goes. So far though it tastes great

Yes we have been purchasing grapes from Vince for over 20 years now. Do you go to the Italian Festival in Ybor ? We enter the wine contest every year and have won once or twice.
