    Keep in mind your focus on the secondary should be the SG, not the number of days. When you see the SG get into the 9s and stays at the same reading for several days your secondary fermentation is complete. It could take longer than 10 days.

    You will be spashing the wine when you bottle or rackso, given everything else you've done, that additional agitation should suffice.

    The process will not go as quickly and you may still have some residual gas that won't get out. I'd try to keep the wine in the high 60s low 70s

    I think you are fine as long as you don't go over 85. You might want to find out what kind of yeast was provided and go online to see what temperature that strain can handle.

    It is a Calif blend of Cab and Syrah so I maybe things are OK, but the instructions top out the SG at 1.09

    I started an Advintage Cab/Syrah today. Added 500g of rasins and about 12oz extra water (to compensate for the grapes). Took several readings and kept getting an SG reading of 1.095 @74degF. Waited 6 hrs, stirred the must gently to make sure I churned things up to get rid of any stratfication...

    I knew it was something like that. What really has me worried is this box doesn't have the numbers spread out like that, and if I try to decipher it using their sequence this box is from either 2004 or 2001....yikes!!

    I picked this up from my homebrew, knowing it has been around for a while. He gave me a great deal to get it out of his store but going to the Winexpert it is no longer being made. Soooo how old is this dog? Also, anyone know what is in this kit?

    She's not a sweet wine fan. I'll just leave it alone. It comes with Oak so that should give it some body but she can start using it a month after bottling.

    I picked up a VR Chard today and wonder if it needs any tweaking (I have some golden raisins) or should I leave it alone. I want a wine Fingal can enjoy as her "evening, sitting in the backyard with some cheese" glass of wine, without having age for very long.

    Cajun Is it wrong that my helper/son is only 16? He finds the whole thing kinda funny....Dad making wine..."suure he is" He didn't like chemistry but enjoys the physics aspect of how to get the stuff from box to bottle. BTW we were in Thibodeaux recently for the Manning...
