What is the cause of the so-called kit wine taste? Is there a way to avoid this when making kit wines?

All - thank you for the recommendations and encouragement! From reviewing previous posts, it's very clear that patience is the key to a great wine. And most importantly, I am really enjoying the process so far including learning from all of you. Btw, I just completed the first racking!

mmadmikes1 - If you would have more carefully read my first post, you would have noticed I was looking for recommendations & comments associated with making the pinot noir. As you pointed out, it wouldn't make sense to ask for a buying recommendation if I already started the kit...

Has anyone made the Estate Pinot Noir? Any recommendations or comments? I just started the fermentation a couple days ago and so far, so good!
