    Thistle Honey

    Has any one used thistle honey in their wine? One of my husband's co-workers, wants to trade a gallon of wine for a gallon of thistle honey. I use honey in my peach Melomel. Read the description of flavor, said it has an anise flavor. Don't like anise.

    Used a recipe out of my winemaking book. Added 1 oz grated ginger, 10 cloves, 3 cinnamon sticks. We always taste at each step of the process.
