I really like the island mist green apple Riesling with addition of two pounds or so of sugar for ferment and a couple months of aging, it turns out great.
Last time I have added campden is when I stabilized last month on the 20 and now it is ready to bottle should I add more before I bottle or leave it be since it's so close to last time? Thanks in advance.
I believe it's ok to do primary ferment with a lot of head space, but after that it would be best to limit the space. Like getting some 1 gal. Jugs to secondary and finish up in.
