Agreed it's a stupid amount to try and displace. About 40000cm3. Grr.

I didn't say it did. I said it's a fair estimate. In my experience it almost always drops ph by that amount. Large ph drops may require slightly more depending on buffering capacity. But as a guide for home wine making in general it works.

Any crazy ideas on how to reduce ullage?
I have about 190L of shiraz, but a 228L oak barrel. I don't want to purchase 40L of someone elses wine to top up. Have thought about marbles but cannot find any in that volume.
Currently I'd just CO2 the headspace every few days...

I have it lying around so was going to try use it.
As for food safe, I think generally that just means various joins and parts aren't suitable for clean in place and need to be pulled apart and cleaned.
Was more curious if it could handle the solids content.
