    Thanks everyone for the ideas. Agreed it's a stupid amount to try and displace. About 40000cm3. Grr. I think I'm gonna go staves in the tank. I just wanted to use my barrel!

    I didn't say it did. I said it's a fair estimate. In my experience it almost always drops ph by that amount. Large ph drops may require slightly more depending on buffering capacity. But as a guide for home wine making in general it works.

    tartaric only. 1g/L to gain 0.1 pH drop.

    Howdy Folks, Any crazy ideas on how to reduce ullage? I have about 190L of shiraz, but a 228L oak barrel. I don't want to purchase 40L of someone elses wine to top up. Have thought about marbles but cannot find any in that volume. Currently I'd just CO2 the headspace every few days...
