Is it possible to make icewine with fruit other than grapes? Specifically the fall crop of blackberries.
 
Dont know if they are still good when he first freeze is there but if so I dont see why not.
 
I don't think blackberries would work for Ice wine. Ice wine is typically made from fruit that can take a freezing and concentration of sugars to high amounts. This also has to be balanced by a fairly high acid content. Blackberries turn to mush when they freeze and then thaw. Even with grapes, there are few varieties that are appropriate for ice wine candidates.
 
ice wine is a style of wine making and usually done in thecolder regionswere the season is short and specif grape types are used
Canada (Ontario) or Germany,,,and has a distinctive way of making it unto itself........google in ice wine and see....you could make any wine grape in the ice wine style ..but it wouldn't be considered icewine........in its truest sense of the definition.....and your brix would be extremely high to start with...google ice wine and answer your on thoughts on the subject.......................
