Campden Tablets

I notice there is a lot of mention of using them, what exactly is the purpose of using the tablets? I'm thinking they are a preservative? I have only made kit wine and none of them mention using campden tablets...but should I be using them? Thanks!

Campden Tablets are a potassium (or sodium) metabisulphite, along with a binder/filler. You use them for killing off native yeasts and/or making sanitation water. 1 campden tablet is essentially equivalent to 1/8 tsp of KMeta.

Ok, so as long as I'm adding everything in the kits at the proper time, I'm good.

I am doing a VR World Vineyard Collection Germ.Mull/Thurgau that I would like to bulk age a couple of months before bottling. The 31st would technically be bottling day if I were to follow the kit instructions, but I would like to rack it into a clean Carboy once it is fully cleared to sit for at least another month or two. When I do, do I need to add more kmeta?

You are probably safe not to add extra, if it is only a month or two. But I would add an extra dose at bottling time.
