    Looking to make some wine for fall season

    No filter... I do not have a filter system. Any suggestions in order to remove the sediment? What about using whole spices and not ground? Any additional time to allow for it to drop? I want to start some now for next winter. Thanks.

    Apple Pie Wine

    Has anyone tried the Mom's Apple Pie Wine recipe? I pulled off the 2 gallon recipe and wanted to make 3 gallons to enjoy next year. I was thinking of taking the apple juice route the first time. Any tweaks or changes that were done? Anyone have a better recipe to use? Keith

    My Stir Degassing is a Waste of Time!

    If you can get you hand pump to hold 22-24 hg the gas will get off pretty quick. It may take a few days but it is more effective than the spoon or paddle.

    Been there, done that and got 100+ bottles. I did not have any clear bottles for my DB so I went and found 40 very quickly. ;)

    Thanks for the bottle suggestion. I don't want to lose the "fruity" characteristics so I may use this to get the temp under 75.

    Joe I noticed that you added #3 metabisulphite & #4 sorbate at bottling. The WE kits that I have done have them added approx 17 days after pitching the yeast in the stabilising and clearing stage. Can you explain why you waited until bottling to add them ? What is the benefit ?

    It was clear as a bell. I transferred to my bottling bucket from the carboy and left (or so I thought) very little sediment behind. The corks have not moved and I have not opened a bottle yet to tell if there is any pressure build up. I guess I will go open a bottle and see what happens.
