    !!!IT MIGHT BE HOT!!!

I just bottled the new batch of Hole Fire Wine and wow it is good... the Currants gave the final product a darker color I think but I did use all green peppers this time instead of red. They did how ever give a much better mouth feel than the raisins so that was a plus. I have a pepper plant...

    Rhuberry Wead (Wine/Mead?) Please help!

The Rhubarb is so subtle that if you use any thing stronger than maybe strawberry or such it will over power it... my raspberry mead sat in carboy for six months and got bottles in December 2011 and will probably be ready in another couple months ... the young mead will in my experience taste...

New and trying to do it old style first

Okay to be clear I use the chemicals now (sparingly) but when I started I was totally against it.. most of our batches went pretty well but we had some huge failures. (off flavors) (infections) Our wine did not start becoming great until we controlled the fermentation environment. just my 2...

    hilean Chardonnay/Semillon

So this wine is 4 months old now and the other night we opened a bottle(two) and were very impressed how well this turned out. it is actually the best chardonnay I have ever drank. I think we may do another batch of the next year.... can't wait to see what its like in a year or two.

improving the flavor of meads with spices/herbs

JAOM uses cloves and cinnamon sticks and such and they sit in the carboy for two months and don't seem to rot... may depend on type of spice added but I would think that the few days (comparably) primary involves you should be safe.
