    Had a great bottling day

I'm always amazed with the All in One Wine Pump. I can't imagine how I would fill all those bottles without it. I know I used to do it the old way, but I'm glad I don't have to any more.

Sold my house....Oh CRAP! Now what?

So, my house has been on the market since May of 2012 with minimal interest, that is until about 3 weeks ago. We accepted an offer and need to be out of here by Mar. 6th. You'd think I'd be ecstatic, however, not taking into account where I'm going to live, I look in my basement at the 14...

    Niagara/Concord blend suggestions needed please

I've got a concord that I bottled in August of 2012. I also have a Niagara that has been very sluggish in clearing, but is finally almost there. I want to make a blush blend with Niagara being the more dominant and add some Concord for added flavor. In my early testing, I'm leaning towards...

    First MLF

This year I started 6 gallons of each Cab Sauv, Cab Franc, and Merlot. Alcohol fermentation has just completed, so tonight I bought and added Viniflora Oneos MLF bacteria. I haven't been able to find any instructions other than you just add it directly to the wine. I believe I have read...

    Entered my first AWS competition

Our local winery sponsored an American Wine Society competition today. I've only been making wine for 2 years, and wasn't going to enter, however I was strongly persuaded that I should, so I decided to enter 5 bottles. I only entered wine I made from juice or fruit and no kits. There were 70...

    Winemaker's log

I have been looking for a winemaker's log that was simple to use, and free to replace my terribly disorganized notebook full of papers. I know some people are using brewtrax, and that's great. Other people insist on keeping paper copies, and that's great too. I just wanted something that...

    BBQ anyone?

I enjoy BBQ even more than I do wine, and have built a few smokers over the years. I have this friend that owns a restaurant who asked me to build him one. After acquiring a 500 gallon propane tank, the fun started. Here's the principle of a reverse flow smoker: Next Monday...

    Cold Stabilizing oops

Note to self: Next time I cold stabilize, replace water/Kmeta solution in airlocks, with vodka. Tonight I checked the temp in the frige I use for cold stabilization, 28 degrees and all 3 of my airlocks were ice cubes. Oops! I melted the ice in them with warm water and replaced with vodka.

    Red Raspberry Wine

I just mixed up the last of my juice. I purchased a 5 gallon pail of red raspberry juice from Walkers and the numbers are 21 Brix, 1.52 TA and sulfites at 50 ppm. I added enough calcium carbonate to drop the TA .3%, then added water to bring it down to .8%. Since I'm going to back sweeten and...

Planning my juice order and need advice

I'm planning my California juice order from my supplier, and I'm stuck. I've got a Pinot Noir, Zinfandel, and Chinti already started for my reds. I have some Reisling, Steuben, and Red Raspberry coming from NY. I know I want a California white, but I'm having trouble deciding between the...

    Bottled first batch of SP

I just got done bottling my first batch of SP. I sweetened it with 5 cups of sugar and on container of Welch's Cranberry concentrate. It tastes pretty good, but I'm sure it'll be fantastic after it chills to ice cold. I'll let it chill over night and try it tomorrow afternoon. I followed...

    Newbie from PA

Hi everyone. I started making wine in Jan. of this year, and have been reading the Forum for about a month now learning everything I can, and decided to register. It's still cold here in PA, and doing my wine in my unheated (55 degrees in the winter) basement has posed a challenge with...
