Hey Leeboy. It won't go rotten. Just make sure you keep an airlock on it and you will be fine. I have stored kit wine in carboys for 6+ months already. Do not worry. Just make sure it is clear.
Rule of thumb is to rack when it is on the cold that way you don't transfer them. If I am not mistaken they can dissolve back into the wine. I always rack in the cold ad don't have problems.

I have been using the mity-Vac for years and have always pumped up to 25 psi and then let it sit until there are no more "small" bubbles coming up. It will drop psi but I pump it up to 25 again a couple more times. Shaking the Carboy helps as well. I have found the orange bung doesn't hold...
