    Hey Leeboy. It won't go rotten. Just make sure you keep an airlock on it and you will be fine. I have stored kit wine in carboys for 6+ months already. Do not worry. Just make sure it is clear.

    Cold stabilization question

    Rule of thumb is to rack when it is on the cold that way you don't transfer them. If I am not mistaken they can dissolve back into the wine. I always rack in the cold ad don't have problems.

    Pat, I have been using the mity-Vac for years and have always pumped up to 25 psi and then let it sit until there are no more "small" bubbles coming up. It will drop psi but I pump it up to 25 again a couple more times. Shaking the Carboy helps as well. I have found the orange bung doesn't hold...

    Sg when I racked was around 1.00 it has finished fermenting at 0.992.
