    Wine Kitz I need Tannin!

I have switched to making wine from grapes in my home endevors but last fall (I live in TN) there just isn't enough hi tannin red being grown in this region to make the type of wine I wanted in a commerical quantity so I settled for juice. Next fall I have a line on getting some WA state Syrah...

    Wine Kitz I need Tannin!

I have ran a commerical brewery for many years and been a home winmaker for many as well. I decided to dabble into commerical winemaking so last fall i bought some Zin, Syrah, and Alicante Bosuchet juice from CA. There are no off-flavors, the color could be a bit darker but is nice, the fruit...

Best way to get west coast grapes in TN

This makes a ton of sense but the prices are quite high. $156 per 5 gallon pail of grapes = 3 gallons of wine maybe and then we are talking $10/btl not even including shipping. Regardless, I want to make a 100% petite verdot. They are very rare and the one I've had was the most intense(in a good...

Best way to get west coast grapes in TN

I'm not opposed to that price. I'd want to do at least a 5-gallon batch so I'd need 3 of those boxes if possible. If they've been hit with S02 I imagine they'd survive the journey fairly well. It seems more economical than the other option.

Best way to get west coast grapes in TN

I'll do it! Packaging shouldn't be that big of an issue but shipping probably will be. They will either have to be (I assume) shipped overnight or refrigerated both of which will cost a fortune but I'm willing to do it. Does anyone have any info on this? I know there are wineries all over the...

    Is .999 safe to bottle?

I have not sorbated, the original yeast was kv-116 I believe, and yeast the kit instructions are to rack several times before bottling.

    Ft rouge and Opti red?

Isn't Lallzyme EX-V to be used during crushing? If so, it's to late for that.

Best way to get west coast grapes in TN

I have made wine from kits and they've turned out very nicely but I love the full control of making wine from grapes. I'm able to source grapes locally here in Tennessee but as you would probably assume we don't have the greatest variety nor highest quality grapes (very wet and very hot) I know...

    Is .999 safe to bottle?

I have a kit Sauvion Blanc wine from original all juice that has been right around 1.000 for over a month now. It is still in the original fermentor and has not been racked. I know a wine like this is supposed to finish somewhere around .995. I use my hydrometer frequently and I know that it is...

Best wine press for 5-6 gallon batches

I do mostly 5 or 6 gallon batches of winewine have gotten to the point where I'm now doing a lot of them. Add to that, I am now living at a house with two huge, heavily producing pear trees and it seems to make sense to buy a press. What size do I need and are there any recommendations? I...

    Ft rouge and Opti red?

I have been fortunate enough to receive 65 lb of chamborcin grapes from a local friends vineyard. Chamborcin is a lovely variety, but like most non-vinifera varieties, it does not have depth of color or tannin complexity that most red wine drinkers crave. However, I have tasted some of his wines...

Advice on MLF for first batches of wine. HELP!

I have been brewing beer for many years but have always enjoyed wine (especially dry reds) and decided to take the plunge. I bought two kits at different price points, varietals, and concentration levels. https://shop.brewcraftusa.com/original-alljuice-zinfandel-23l-mms17 - A full volume (No...
