    Vinny I like that scraper. Post a link pls. I use homemade labels on the inkjet too and spray the sheets of labels with a waterproofing material very lightly. Apply with a glue stick on the bottle AND comes off very easily. I only label a portion of the batch saving those for gifts. For home...

    I recently racked 3 gallons of apple wine leaving some behind that was sediment. I topped up with a bottle of apple wine from the prior year so it should be pretty close to the same. Joe

    I like the merlot with a little oak so it makes the flavor pop. Not a great description but that’s what I add to the carboy upon aging. Cali juice. Joe

    My recent plan is to bulk age reds and at two years bottle them. That keeps me from drinking early not quite ready wine.

    I did a 3 gal batch of applecwine from fresh apple juice sourced at a local farm. Second time doing it this way since the previous year it was a big hit. Pectic enzyme is your friend with this one.

    I tried to boost the flavor with adding a commercially made pear syrup…not a winner. Too flowery scent and taste.

    I agree Raptor. I never tried the oak though may have to do that this summer. I’m a big fan of pear wine mostly because the neighbor gives me all i can use. LOL

    North Florida Wine Newbie

    Welcome! Our winter break is in Pensacola- much better than Ohio! I made a kumquat wine from local citrus fruit there. Very very citrusy flavor but mellowed after two years. Nice for a sangria.
