    I think you may find any fruit wine will benefit from a little back sweetening to bring out the fruitiness. Plus the high alcohol content doesn't help either.     I hate when this happens. A few days ago when I took a pH reading I had a huge difference in the readings. I just took a reading on two wines and whether it was agitated or not I got the same reading within a few hundredths. Thanks for your responses.

    My employees got together and bought me a Gardyn 3.0 for my birthday. It's a vertical hydroponic growing system with 3 tiers of 10 pods each. Everything germinated so now I'm waiting for the true leaves to add the nutrients according to the instructions.

    I have the luxury of having a controlled environment for my bulk storage. Once I see no sign of degassing I always use a solid bung. Once they are set they seem to stay in place. BTW, I love the sound of the vacuum releasing on a properly sealed container.
