June 2014 Wine of the Month Club

Update on my red blueberry: Racked this wine last night. It dried out very nicely - got to about 0.995. It may have some CO2 holding up the hydrometer, so it might be closer to 0.990, I'm not sure. I made sure to have enough extra to do a little taste test, and let me just say, this wine will...

June 2014 Wine of the Month Club

Absolutely, lately I've been thinking about how to make something just like that with just store bought ingredients. Hopefully it works out! vernsgal: That looks awesome! I've really been in to blueberries myself lately, so that goes right along with my tastes.

    Bochet Experiment

Hmm, well so much for that hope then. Ray, to answer your question, I used the "shake well" method of aeration, as for this one I was using a glass carboy as a primary, so that could be it. Since I made some rookie mistakes with that batch, my second used a bucket as a primary, which got stirred...

    Bochet Experiment

Update: A couple days ago I racked my original bochet (the one I didn't use nutrients on, besides raisins), and I have a few notes about it. 1. I now see why nutrient is so important. Upon racking, it had gone from 1.100 to just under 1.040, making it about 8% alcohol and still very sweet. 2...

    Possible Wine Rack?

Hello everyone, This morning I had the fortune of one of my friends giving me one of those cube type organizers, one with 9 cubes. It's meant to be a bookshelf or a place to store things, and it feels pretty sturdy. Would it be possible to store wine bottles in this? Each compartment can hold...

    Bochet Experiment

A little background on this wine, just to keep everyone interested :). Yesterday morning I came up with what I thought would be a cool name for a wine, and as I got to thinking about it, I decided I would try and make a wine to go along with the name. I decided to try and make a blackberry...

    Bochet Experiment

Thank you both for your input, I really value your opinions! Well, I went out last night and gathered all my supplies, and started working. I altered some things from my original plan, and here's where everything came out: 3 Pounds Near Black Clover Honey (I only got burned once!) 1.5 Quart...

    Bochet Experiment

Update: My first bochet is still fermenting very nicely in the primary. The success I had with darkening the honey and the amount the flavor of it impressed me has made me want to make a second gallon. (This time with some nutrients.) Anyway, here's the tentative idea: 1 Gal Spring Water 3...

    Bochet Experiment

Thanks alot for the responses, guys. Those are some good articles to read, and I'll be getting some real nutrients very soon. Thanks again, Cheers.

    Bochet Experiment

Well, about the nutrients, I think I'm just going to let it ferment as is for now and add them if necessary, but I'm not very well versed in nutrient additions, so I guess I don't have a schedule, lol... As for oak, I'm considering adding some medium to heavy toast American oak. How does oak...

    Bochet Experiment

Hello everyone, I just thought I'd share with you all my recent experiment with making a bochet mead. Here's the recipe I used: 1 Gallon Bochet: -3 Lbs. Clover Honey (Caramelized) -25 Raisins (Nutrient) -Pure Spring Water to 1 Gal. -1 Pack Red Star Champagne Yeast -Specific...

First 5 Gal Batch - Explosion!

Some bad news.. When I got home yesterday, I found that it had blown the lid off again, and most of what I added to the juice was on the floor, so I had to toss it. Well, lesson learned. The good news is that I'll be starting a new batch tonight! It's a 6.5 Gallon Ale Pail with marks up to 5...

First 5 Gal Batch - Explosion!

Thank you both for the advice. I'll definitely do that and hopefully I can get some great wine and some experience from this!

First 5 Gal Batch - Explosion!

Okay, then hopefully it will stay safe. So, just a question regarding this advice: Wouldn't just setting the lid on the bucket cause an overflow and a mess? Or does the fact that there's no airlock on it allow gasses to escape quicker so that doesn't happen? Thanks for the info.

First 5 Gal Batch - Explosion!

Hello All! I'm brand new to this forum and also a novice home brewer. So first of all, thanks to everyone here sharing their knowledge and experience! This is a great forum. Now that I've said that, on to the problem. Saturday evening I put together my first 5 gallon bucket batch of my...
