    I have my food grade plastic pail that once held cake frosting. Just want to verify again what the best way to prepare this for accepting the initial juice/concentrate. Should not use any bleach, correct? Just clean with hot water and a brush and then rinse with K-Meta? Is this enough?

    Secondary Carboy sizing?

    I plan to start out with around 3+ gallons in my primary. When I transfer this amount over to the secondary carboy, does the gallon size of the carboy matter? In other words, if I rack 3 gallons into a 5 gallon carboy is the head space at top going to be a problem during fermentation?
