New to Wine making, completely overwhelmed from over researching and loving every minute of it.

Welcome to WMT! I don't have everything on your list. You don't have to get everything at once. You can pick up things as you go and, as @Jim Welch says, you can get many things on Craiglist or FM Marketplace.

Post a Meme, any Meme! (no politics)

Imagine Frank Duryea in 1966: "Yeah, my brother and I more-or-less invented the car." "Uhh, sure Mr. Duryea, now let's get you back to your room in Wing C. They're serving pot roast tonight again."

No juice pails in Minnesota this year (2024)

No, I am not going to get spring buckets this year. I'm moving to a new house right around then, and life will be a complicated zoo for a while! I will have a lot of work to do....

1st Wine Kit...Temperature and EM Bulk Aging Q

I concur with Bryan's assessment of the expected losses. In addition, many 6-gallon carboys hold a bit more than 6 gallons. I generally get about 31.5 bottles out of my carboy, which is like 6.24 gallons. So right there is 1.5 bottles to be made up.

    Can I use canned fruit?

I am not sure I agree with winechef. I don't think that canned peaches necessarily include preservatives. I think they are pasteurized before canning, but no preservatives. I am basing this suppposition on a few random webpages, but you could check the ingredients on your cans...

    WineXpert WineXpert Kit

I am pretty sure you can put that f-pack in primary. However, it is possible that it has sorbate in it. You mention the directions instruct to add it with C&K. Are you also supposed to add potassium sorbate after fermentation? If not, it is possible the needed sorbate is in the f-pack. If...

    How

I haven't fully digested it (no pun intended), but it drives me insane when people do math like that. They are using the = sign to mean something DIFFERENT from "the left side equals the right side." Also, using : to mean division is, welll, different! I may try and give it a go to figure...

    How

Looking at Syltbar's website, the claim is merely that it is a (wait for it!) dry wine. They ignore the calories in the ethanol. My words, not theirs, but here are some of their words: Basically, they are producing a dry sparking wine and then touting it as lo-cal.

    Kit wine vs “from scratch”

Tim Vandergrift (expert on modern kits) asserts that it is because kits have a lower level of dissolved solids: https://winemakermag.com/technique/550-picking-the-right-kit-wine-kits

    EC1118-Home Brew Juice from Store

Yeah, that is pretty high, indeed. If your yeast make it all the way, it would be ~20%. I won't be surprised if the fermentation stalls out at 1.00x to 1.01x. But that is not the end of the world.
