    WE Diablo Rojo..smells VERY odd

    I've done rwo Diablo's. Mainly because the ladies say it's just like factory "Apothic" and they really liked it. Super sweet and fruit forward with a med+ body. Don't know about the odd smell, but both have smelled very strong but fruity in the primary when I put them down.

    It really worked again after the addition of the apple juice so I figured if nothing else, it generated some more alcohol. No matter, if it didn't, it'll be a cooler wine

    I used right around 50 lbs of apples for my 5 gallon batch. The color is wonderful and its crystal clear. I think I'll try to backsweeten as my wife and her buds enjoy sweet drinks. How much k- meta do I use with the pot-sorbate before I back sweeten? I'll see if I can post the recipe...

    I made a batch of 5 gallon apple wine back in August from the apples on my tree. I did the final rack today and tested it (of course) I can taste the booze and it's dry ( that doesn't matter) but the apple flavor is faint at best. 1. How can I sweeten / flavour it? 2. Will it start up again...

    That part confuses me a bit. I know the sorbate stops the fermentation. But I don't plan on adding anymore fermentables so when this new juice is finished working can I just leave it and not add sorbate? I don't mind adding sorbate at all. Just wondering if there are other options at the end...

    Oh, I didn't know I could do that. That's a good idea. Working a little more is no big deal. The recipe I found says this is a six month wine (due to settling time) so a little longer wont hurt a thing. Apple juice I can find easy enough:h Thanks

    Haha I thought about that. I think I'll just rack down. I prefer glassbottles but I live up north and am about 7 hours from the nearest brew store, so is it ok if I found some plastic jugs that i could seal up? Wont change the taste of the wine?

    Lol, Yep, Splitting the batch is the easiest and best way. Dang, why didn't that come to me when I was staring at the carboy. Man, it's only Tuesday, wonder how smart I'll be on Friday haha. Thanks a bunch.
