    I'm thinking that since you can taste the softness it might be done. Maybe the reagent or mobile phase in your equipment needs replaced?

    It's critical!! I made a batch if concord once and rushed through and just rinsed everything, didn't clean or sanitize. I left it sit after the SMB addition for 2 days and it started growing some stinky bacteria. Not good

    Interesting about the peel addition. I tasted some orange wine before and it seemed to lack a lot of complexity compared with grape wine. I'm thinking that you will get some good orange oil and maybe a sort of tannin type complexity to it with the way your going about it. I would be interested...

    Timing

    Super quick way is to buy a bottle of 100% real juice with no preservatives take a little juice out and add sugar until your SG is around 1.10, just add dry yeast, add airlock and let go. Not the best way but definitely a quick way.
