I hadnt planned too but some honey that i harvested from my bees was crystalised in the comb so i melted wax and honey out in a big pot, using the honey water ti begin my must. I threw in 5l of elderflower cordial and 2l apple juice and 400g of chopped raisins...

    Lavlin state that 1118 ferments well within 50°F to 85°F but obviously it will be slow if cooler.. My fermenting places both stay between 62-70°F so im used to being patient for the yeast to multiply to critical mass ;)

    A guy i know talked about having a 10% cork wastage when corking... Turns out he was putting them.in with a mallet and broke some in the process. It is possible but my £4 hand corker does the job :)

    Just reading the threads i notice people taking sg readings all the time.. Is this just cos people cant leave it alone or is it advisable? I hear so much about oxidisation and thus having to add campden or inert gases. How often should i be taking readings at each stage?

    Under stair cellar progress

    I have a small space under my first 5 steps that i have utilised... Broke up a pallet and built a wee rack that should hold 33 bottles. Not lots but using the space i have! Only thing is it needs a rub with sandpaper as the pallet wood is knobbly in some places, making it tight for certain bottles.
